Arla Foods Ingredients has formulated a new solution to create fermented drinks that are clear and high in protein. Lacprodan HYDRO.365 and Nutrilac FO-8571 minimizes cloudiness and sedimentation, the company says. They can be used with thermophilic cultures for fermented drinks or mesophilic cultures for kombucha-style beverages. The ingredient can also be applied to yogurts.
