Alland & Robert has introduced an organic Karaya Gum. Ingredient applications range from food to pharmaceutical applications. The ingredient can be used in the formulation of coatings, fillings, dressings, desserts and emulsified sauces to improve texture. Without chemical modification, Karaya gum offers many functional properties: texturing and bulking agent, dietary fiber, adhesive compound, viscosity control agent, water retention and suspending properties, the company claims. The gum is gluten-free, high in fiber, 100% natural and vegetarian, and free from pesticides and GMOs.
