DuPont Nutrition & Biosciences has announced the introduction of Bonlacta, an enzyme for the lactose-free dairy market, to North American markets. Bonlacta is fast-acting under refrigeration conditions and is able to withstand high temperatures to enable new, optimized processes with even faster lactose hydrolysis targets, the company says. Intended for use in fresh cheese and related dairy applications, the ingredient has high enzyme stability, relative dose reduction, and improves lactase addition flexibility during processing.
