SimpliiGood by AlgaeCore Technologies Ltd. has released a breaded-chicken cutlet analog for plant-based chicken. Composed of 80% pure, minimally processed spirulina microalgae, with added prebiotic fibers, it mimics the flavor, appearance, and structure of real chicken breasts while also providing a meaty “umami” experience, the company says. Spirulina is known for being a good source of iron, calcium, B vitamins, essential fatty acids, and antioxidants. 100g of SimpliiGood spirulina is equivalent to 200g of real chicken in protein load. The ingredient will contribute to reducing waste and energy consumption, by minimizing the overall downstream carbon footprint.
