Fargo, N.D.—Healthy Food Ingredients (HFI) announced that the company has published a white paper outlining the benefits of anthocyanins in Suntava Purple Corn.

HFI explained in a press release that anthocyanins, which give fruits, flowers and plant organs their rich blue, red and purple colorings, can be found in significant levels in purple corn-based products even after processing. The white paper addresses the levels of retained anthocyanins in foods including tortilla chips, pasta, cereals and snack foods made with Suntava Purple Corn.
