·         Olive oil- 2 tablespoons

·         Red Bell Pepper- 1/2 large pepper (diced)

·         Spanish Onion- ¼ cup diced

·         Minced Garlic- 1 large clove

·         Chopped Celery- ¼ cup of a rough chop

·         Tomato Paste- 2 tablespoons

·         SSI #1029 Yeast Extract Extra Special Dark- ½ teaspoon

·         Cumin- ½ teaspoon

·         Cayenne Powder- 1/8 teaspoon

·         Red Wine Vinegar- 1 teaspoon

·         Canned black bean- split 2 x 1 cup



In a large pot, heat olive oil with pepper, onion, garlic, and celery.  Cook vegetables thoroughly.  Add Vinegar, Tomato Paste, #1029, cumin, and cayenne.  Add 1 cup of black beans.  Simmer for 10 minutes.  Transfer ingredients to food processer.  Blend until smooth.  Transfer blended beans back into pot.  Add the balance of the black beans and heat through.
