Gluten-Free Spice Cookies

Ingredients:

Zemas Gluten-Free Chocolate Chip Cookie mix

1/8 c. unsweetened applesauce

3 tbsp. oil of choice (grapeseed oil, coconut oil)

1/2 tbsp. pure vanilla extract

2 tsp. ground cinnamon

1/2 tsp. nutmeg

3/4 tsp. clove

Non-Vegan Ingredients (follows same directions):

1/4 c. oil (or 1/4 c. butter)

1 egg

1/2 tbsp pure vanilla extract

2 tsp. ground cinnamon

1/2 tsp. nutmeg

3/4 tsp. clove

Directions:

1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

2. In a stand-up mixer with a paddle attachment, combine the applesauce, oil, and vanilla. Add in mix, cinnamon and clove.

3. Form 2” balls and place on cookie sheet. Using your palm, lightly press down on the cookies.

4. Bake 12-14 minutes. Cool on cookie sheet for 10 minutes and transfer to a cooling rack.

Zemas recommends storing any leftovers in a container with a tight fitting lid.
