Ingredients:

Salad:

1 cup KAMUT® wheat berries

1/4 cup golden raisins

1 large orange: peeled, remove pith and cut into 1/2” segments

1 1/2 cup coarsely chopped, toasted walnuts

1 1/2 cup crumbled blue cheese

Salt and pepper to taste

Dressing:

1/4 cup fresh squeezed orange juice

1 teaspoon orange zest

1 tablespoon fresh squeezed lemon juice

1/4 cup extra virgin olive

2 tablespoons honey

Directions:

1. Soak the KAMUT® wheat berries overnight in 3 cups of water, drain, put into a saucepan and cover with water (at least 2” higher than the KAMUT® wheat berries).

2. Bring water to a boil, reduce to a low heat and simmer for 20-30 minutes. The KAMUT® wheat berries should be tender but still slightly chewy.

3. Drain and cool.

4. Assemble and toss together in a serving bowl the KAMUT® wheat berries, golden
raisins, orange segments and shallots. Season with salt and pepper. Let stand for 10 minutes.

5. Meanwhile, put all the dressing ingredients into a jar with a lid and shake until well blended. Drizzle over salad and gently toss, then sprinkle with the walnuts, blue cheese and parsley.

Makes 4-6 servings.
